Gluten Free and Grain Free Eggplant Pizza
This eggplant pizza is the perfect solution for people who can’t eat wheat, gluten or grains. A few months ago I drastically changed my diet cutting out all grain, wheat and sugar. I’ve been doing well but the one thing that I have missed is pizza! Yummy Yummy pizza. I tried making pizza with hollowed out zucchini, which worked pretty well but by far this eggplant pizza wins. It was a hit not only with me but with the kids too! They asked for seconds.
Gluten and Grain Fee Eggplant Pizza
What you’ll need (ingredients)
2 Medium Sized Eggplants
Salt
1 C. of Mozzarella Cheese (or more depending on how much cheese you like)
1 Package of Pepperoni
1 C. Tomato Sauce
Preheat oven to 350°.
Slice your eggplant into 1/2 inch slices either length wise or width wise. I did mine both ways to make little round pizzas for the kids and longer ones for the adults. It’s really your choice either way works. Once they are sliced lay them in/around a colander and sprinkle with salt. Let the eggplant sit and drain for 20 minutes or so. This salting helps to remove any bitterness from the eggplant. After 20 minutes rinse the salted eggplant slices and pat dry. Lay the eggplant on a greased cookie sheet or one lined with a Silpat Mat. Bake in the oven for 15 minutes at 350° or until soft. Pre-cooking the eggplant ensures that it is fully cooked in the end. Remove the eggplant from the oven and leave on the cookie sheet. On each slice put a tablespoon or so of tomato sauce on each slice then sprinkle with a tablespoon or so of cheese and top with your favorite topping, I used pepperoni. Place the eggplant back in the oven for an additional 10 to 15 minutes or until the cheese is super bubbly. Remove from the oven and enjoy!
