How I Made a Four Layer “Cake” out of Marshmallows and Cereal.

My oldest requested a four layer marshmallow fondant cake back in June.  Her birthday is in January so I happily agreed to make one, thinking she might forget.  Fast forward six months and just days before her actually birthday when she reminds me that I’m going to make this four layered masterpiece for her party.  I start to panic, I’ve never made a four layer cake, then I have an epiphany.  I can make the “cake” out of rice crispy treats that way I don’t have to worry about it crushing itself or figure out how to get four layers of cake to stay together.  The girls helped me make the layers and the marshmallow fondant.  We had a great time.  Since some of her friends have gluten allergies I decided to make it wheat free so I used Arrow Head Mill’s Puffed Rice Cereal and Kraft Marshmallows (which are gluten free).  I used the recipe on the back of the marshmallows for the “cake” and made Marshmallow Fondant for the icing.  Here are some photos of the process and of course the final cake.

    OH!!! That is the coolest cake!! When Roo was 5 she wanted a 5 layer cake… I found different sized circle pans (pyrex dishes, cupcake molds) and she decorated it with fruit… the smaller sizes worked out great. I’ve never done fondant icing before… maybe this is the year… she’s doing a tie-dye party… hmmmm… Thanks for the recipe!!

    That came out really well! I am so impressed that you made your own fondant. When I see it, I always want to try it….I have some birthdays coming up…maybe I will get the nerve up…

    Thanks for the great comments. The Marshmallow fondant was super easy to make. It did take some kneading on the counter to get it to really come together but it was a great workout for my arms. If you try it I’d love to hear about it.
