Caramel corn hits the spot! My teen and I were hanging out yesterday when we both decided we wanted something sweet! Caramel corn for the win! We’ve had hit or miss luck with caramel corn in the past and neither of us wanted to wait to bake it so we decided to try something totally new and made this delicious super easy no-bake caramel corn! I love these opportunities to continue to connect with my youngest through cooking. This caramel corn comes together quickly and easily for a late-night snack!

Quick No-Bake Caramel Corn

Delicious buttery warm no-bake caramel corn in minutes!

  • 6 cups popped popcorn (We popped our own on the stove with 1/3 c cornels and 2 tbs olive oil but any method works. )
  • 1 cup brown sugar
  • 1/2 cup salted butter
  • 1/4 cup corn syrup
  • 1/2 tsp baking soda
  1. In a heavy pot combine the butter, brown sugar and corn syrup.

  2. Cook the mixture on medium low heat. You can give it a little jiggle every now and then but do not stir!!!!!

  3. Once large bubbles start forming and popping start a timer for 5 minutes.

  4. After 5 minutes the mixture shoudl be a golden browm. Remove the pot from the heat and sir in the 1/2 tsp of baking soda. The mix will get bubbly and fluffy.

  5. Quicly addthe caramel to the popped opcorin in batches, stirring between each add.

  6. Stir well to combine and let sit until cool.
