Garlicky Feta and Black Bean Dip

Today we were hankering for chips but had barely any salsa. Tortilla chips are fine alone but they’re much better with something to dip them in. I hit the pantry intent on pulling out some chickpeas to make hummase but we were out. All I found was a lowly can of black beans. So I tried something new. I grabbed the black beans, some garlic, some fetta I had in the fridge and a pinch of salt an pulverized it in the food processer. It made a pretty good dip which my girls eagerly gobbled up.

Garlicky Feta and Black Bean Dip

  • 5 cloves of garlic
  • 1 can  Black Beans (mostly drained)
  • 2.5 oz of feta
  • salt to taste

Put 5 cloves of garlic into the food processor and process till finely chopped. Drain the can of black beans most of the way but leave a little liquid to help it all blend. Add the black beans to the food processor and process till smooth. Next add the feta and salt and process till smooth. Serve immediately and enjoy.

    This is SO up my alley! Black beans are my favorite beans and we have been studying the Greeks, so we have been eating a lot of feta!!! I love feta!!!
