Shortbread Strawberry Sunrise - Super Simple Dessert

This simple desert makes 24 cookies and as many servings of the desert as you have strawberries!

Ingredients

Shortbread Cookies

  • 2 sticks of butter softened (1 cup)
  • 1/2 cup of sugar
  • 1 1/2 cups of white flour

Whipped Cream

  • 1 pint heavy whipping cream
  • 4 tbs powdered sugar
  • 1 tsp vanilla extract

Fresh Fruit

  • 24 strawberries

Instructions

Shortbread Cookies

  1. Preheat Oven to 350

  2. Cream together butter and sugar until smooth.

  3. Add flour and mix until well combined.

  4. Turn onto a floured surface and roll out to 3/8 of an inch thick.

  5. Cut with sun-shaped cookie cutters.

  6. Place on ungreesed cookie sheet and bake in preheated oven for 10 to 15 minutes until golden brown and crispy.

Whipped Cream

  1. Pour a pint of heavy whipping cream and powdered sugar and vanilla into a bowl. Whisk with a hand wisk or electric mixer until stiff peaks form.

Plating

  1. Remove stems from the strawberries. 

  2. Cut strawberries in half and place in serving bowls. (This is great for the kids to do since you don't need a sharp knife.)

  3. Place a tablespoon, or three, of whipped cream on top of the strawberries and place a cooled cookie, or two, into the whipped cream. 

  4. Serve and enjoy!
