The relatives are gone but the food is far from it. What to do with Thanksgiving leftovers is a challenge and if your family’s anything like mine you’ve cooked enough to feed a small army.

Now I’m a huge fan of the traditional turkey, stuffing and cranberry sandwich but there are options beyond that.

For a new take on the traditional Thanksgiving sandwich check out the Thanksgiving Monte Cristo or the Turkey, Brie, Pear and Cherry Chipotle Pinini. .

Those recipes cover the turkey but what about my favorite part if the meal, stuffing. Over at Food Network they have a great looking Stuffing Frittata recipe. If you have a deep fryer then Fried Stuffing Balls look like the way to go.

      It seriously looks delicious. We were away for Thanksgiving so I didn’t get to try this but I’m definitely going to try this with the Christmas leftovers.
